Folium Pinot Noir 2020
Very seductive style. Medium bodied. Plenty of floral influence of dried rose and violet. More fruit-focused on the palate with juicy plum and raspberry, and a gentle spicy cedar oak. Deliciously drinkable wine with cellaring potential.
The grapes were hand-harvested on 17th March 2020, from organically managed vines planted in 2003, on a mixture of clay and silt soils containing shingles and larger stones. Grapes were destemmed into stainless steel tanks kept at ambient temperature for approximately five days before fermentation initiated naturally with indigenous yeasts. After fermentation was complete, the wine was separated from the grape solids and the remaining solids were then gently pressed. The wine was transferred into French oak barrels, (with 10% new oak) for 11 months, during which malolactic fermentation occurred naturally.
