From a single vineyard, the fruit was machine-harvested and gently pressed to reduce bitterness. Part of the juice fermented in old French oak for texture, while the rest stayed cool in tank to preserve brightness. Aged on lees before blending - only the free-run juice made it to bottle.

The primary emphasis for all of Mahi’s wines is texture, aiming for wines that give real palate satisfaction rather than fruit-bomb styles.

Oak Barrels
Mahi uses French oak barrels to give their wines more depth and character, adding gentle flavour and a smooth feel while keeping the taste true to where the grapes are grown.
