Seifried Aotea Methode Traditionelle NV
The Aotea Methode Traditionnelle is gorgeous in the glass with a fine bubbles. Generous flavours of grapefruit, warm brioche and buttered toast notes with a crisp, lasting finish.
The blend is 52/48 Pinot Noir ( from their Challies vineyard) and Chardonnay (from the Rabbit Island vineyard). The grapes were harvested during the cool early hours of the day and quickly brought to the winery for pressing The free-run juice from the press was cold settled overnight, before being racked, warmed and inoculated. A smooth ferment progressed to dryness, followed by malolactic fermentation. The young wine was then prepared for bottle fermentation and aged for over seven years. After disgorgement in July 2024, the wine was released in November 2024.
