Fruit from five Marlborough vineyards was hand-picked and gently whole-bunch pressed to preserve freshness. Around 20% fermented in old French barrels, the rest in cool tanks to retain vibrant fruit character. A third of the ferments used natural yeasts. Aged on lees, the final blend is all free-run juice.
Texture
The primary emphasis for all of Mahi’s wines is texture, aiming for wines that give real palate satisfaction rather than fruit-bomb styles.

Oak Barrels
Mahi uses French oak barrels to give their wines more depth and character, adding gentle flavour and a smooth feel while keeping the taste true to where the grapes are grown.
