Deep Down Organic Sauvignon Blanc 2023
This wine has the character of a typical Marlborough but with the volume turned down giving notes of elderflower, citrus blossom. A little fermented in oak creates a smooth round mouthfeel and makes this a more complex wine than your average New Zealand Sauvignon Blanc.
The grapes were sourced from an organically farmed single vineyard, in the Southern Wairau Valley, with silt and clay soils with some river gravels. Grapes were hand-harvested, and after pressing, the majority of the juice (65%) underwent wild fermentation in stainless steel tanks, whilst 35% was fermented in old French puncheons. Post-fermentation, the wine was left on its lees for 3 months with regular stirring. The majority of the wine underwent malolactic fermentation. The wine was bottled without fining and with minimal filtration.
