Burn Cottage Vineyard Pinot Noir 2021
This wine has aromas of cherry, rose and spices with enticing savoury undertones of truffle and autumnal earth. On the palate, good concentration and supple tannins lead to a long, lingering finish.
Grapes were hand-harvested between 19th March and 6th April, with an average Brix of 23.2. The fermentation process utilised ambient (wild) yeasts, with 10% of the grapes undergoing whole-cluster fermentation. Average time in fermenter was 17 days. Ageing in French oak barrels, with approximately 24% being new oak.
