Peregrine Pinot Noir 2019
Concentrated aromas of dried strawberries with notes of black cherry, vanilla and game. Finely-grained, mouth coating tannins, supported by a juicy fruit flavour and firm acidity.
Hand-harvested grapes came from three sub-regions: Bendigo (50%), Pisa (42%), Gibbston (8%), each contributing unique characteristics to the blend. A combination of whole bunch and destemmed fruit fermented using both wild and selected yeast strains, hand plunged in open-top fermenters, and matured for 10 months in French oak barrels, with approximately 35% new oak, to integrate flavours and add subtle oak nuances.
