Peregrine Pinot Gris 2023
Textured, packed with apricots and nectarines, the sweetness of elderflower and tang of ginger on the nose balanced by a fine, fresh citrus.
Fruit was sourced from select vineyards within the region, planted on predominantly glacially derived loess soils over schist alluvial gravels. Grapes were hand-picked, with a combination of whole bunch pressing and de-stemming, with some skin contact. Fermentation was in stainless steel tanks at a cool temperature, using a combination of wild (indigenous) and selected yeast strains. The wine was held on light lees in tank for four months with occasional lees stirring.
