Burn Cottage Moonlight Race Pinot Noir 2020
This Pinot has bright floral notes, red cherries and plum. With a vibrant core, and a silky texture, there are complex layers of savoury black tea, spice and earth.
Grapes were hand-harvested between 18th March and 69h April,from 3 estate vineyards: Burn Cottage Vineyard in Lowburn, and the Sauvage and Sappa Vineyards in Bannockburn. The fermentation process utilised ambient (wild) yeasts, with 7% of the grapes undergoing whole-cluster fermentation. Average time in fermenter was 18 days. Aged for 11 months in French oak barrels, with 22% being new oak.
