Hand-picked early in April from Akitu’s estate vineyard, the grapes were gently whole-bunch pressed while still cold. Fermentation took place with neutral yeast at cool temperatures to retain aromatics. The wine was left on lees to build texture, lightly filtered, and then bottled.
