As the name Schisteux suggests, the Chenin Blanc on the Sato vineyard is grown on the parts of the site that are richest in schist soils. This imparts a distinct minerality to the wine. A powerhouse Chenin, this is a wine of depth, texture, and purity that will undoubtedly impress.
Grapes where hand-picked on 20th and 26th April 2022 from the Sato Farm vineyard, planted in 2016 on alluvial, sandy or silt loam with schist and quartz gravel. Schisteaux refers to the Schist in the soil. The organically farmed fruit was pressed overnight, before a natural yeast fermentation in oak barrels, and ageing for 15 months in French oak barrels, 24% new oak. The wine was bottled on 28th August 2023, without fining or filtration.
